Indian Eggplant
Meirav from Le Petits Chef Vegan sends us a new recipe: "It's called Indian Eggplant and it's quite lovely and simple...you can serve these as they are or with tomatoes or tomato sauce."
This evening I am going to the market to find eggplant & this is going to be dinner. :) I have some collards that were going to be lonely - fear not collards, your knight in shining armour is coming.
