Hi Jen...I've been following this blog and your Vegan Lunchbox blog for ages now, but I've never commented. I'm not vegan, but I still eat like one sometimes. LOL I've gotten delicious recipes from your blogs, as I'm sure everyone else has. This one is the next one I'll try. Looks delicious!
Sounds delicious... probably because everything but the bread and tomato are high in fat! Yummy! If I try this, I think I'll eat only a half or quarter of the sandwich at one sitting so I don't have hundreds of calories to jog off the next day!!! Thanks for the recipe! Love & Light~ OM girl

I have to disagree. The avocado and feta are high in fat, but hummus is basically mashed beans and can easily be made without added oil or fat. I would personally leave off the feta and add lettuce and/or sprouts, but avocado is a healthy fat.
This is one of my fave kind of sandwiches in summer when the tomatoes are so ripe and good. I love roasted red pepper hummus and tomato on the sprout bread- simple but really really good! And sometimes I add some sprouts.

If I were to substitute the cheese for Kalamata olives, I would call it a greek salad sandwich. But the avocados would put a twist on it. Yummy!

ReplyDeleteThanks for your tip on a feta cheese alternative. I LOVE feta cheese and am newly committed to going as vegan as I can, lol, for health reasons.
