Sprout Salad

A summer farmer's market salad, all local from Salt Spring Island, BC, Canada: spinach, pea shoots, mixed bean sprouts, peanut sprouts, purple broccoli, and mixed lettuces.

Wrapping salad in rice paper and dipping into dressing is a great way to shake up your salad routine:

Wow! Purple Broccoli? I thought that was lilac cauliflower! Gotta check that out...

what a good idea with the rice paper.. I bet I could take a salad on a hike with me that way too! (Yes I am one of those geeks who would love to be able to eat a salad on a hike....)

I've never even heard of peanut sprouts, and now I want to go find them and try them!
