Veggie Pesto Sandwich

Liz writes, "This isn't the most beautiful sandwich, but it was so tasty! My first attempt at baking homemade bread somehow yielded a crusty flat loaf, which ended up being perfect for a serious sandwich. Pesto from my own basil, plus shredded carrots, sliced cucumber, homegrown arugula and a slice of mozzarella: a deliciously simple sandwich!"

To make it vegan, substitute some vegan mozzarella or some avocado!

Sauerkraut

"My name is Terita, I'm a vegan living in San Diego and I took this photograph for my food blog, Vegetable Mine. It shows my homemade, probiotic-rich sauerkraut as part of a light summer meal that I gobbled up shortly after taking the photo :)"

I couldn't find a recipe for the homemade sauerkraut on Terita's blog, but there is one at Wild Fermentation. I've been reading a lot about the health benefits of fermented foods lately, but haven't gotten up the courage to try making my own!

Portobello Burgers

Hannah writes, "This is my version of a vegetarian burger. Not exactly raw food material, but vegetarian style for sure, and a damn good one at that!

"This takes about 10-15 minutes of prep and cooking combined. A toasted bun with a panfried portobello mushroom (not actually panfried, but over a pan and cooked with the help of some water), topped with two layers of thinly sliced avocados, and some panfried (again not actually fried with oil) minced tofu. The tofu was cooked with a dash of hoisin sauce, a couple of shakes of hot sauce, and a pinch of chili pepper flakes. Add a dash of pepper to both the mushroom and the tofu topping. Enjoy!"

Lemony Baked Tofu

Cadry writes, "The secret to this Lemony Baked Tofu with Rosemary is in the pressing and the long baking time. It gives the tofu such a wonderful give and texture that is, dare I say, succulent. It's great on its own, in a salad, or on a sandwich. You can find the recipe on my blog Cadry's Kitchen.

BodyRock TV

Mandy wrote this from Seoul:
"...there is a website that I've discovered that has been a life saver since I moved here. The gym in our area is incredibly expensive and running hurts my knees, so I was at a loss as to how to stay fit. Luckily I found Zuzana! Her blog is full of fun, short exercise routines that can be done in your own house with minimal or zero equipment. They are also incredibly intense, so even 15 minutes feels like sweating at the gym for an hour or more."
Follow the link to Body Rock TV for Zuzana's inspiring videos of short interval workouts you can do at home using your own body weight and minimal equipment.

Thanks, Mandy!
