Raw Vegan Cheese Crepes


Melissa Cohen sent in this picture of "the best ever raw vegan cheese crepes!" Coconut-squash crepe wraps filled with homemade fermented nut cheese, homegrown basil and tomatoes, topped with homegrown basil pesto, with a backyard lettuce salad on the side.

I get fermented cheese, but how do you make crepes without cooking them?

You have to use a dehydrator, I don't know how these are made, but I know you can made raw crepes with a base batter of flax seeds, water, and a vegetable. I haven't made any yet, but I will when I get a dehydrator :)

i'm travelling in portland right now, but i promise that i'll post the recipe when i get home. you do need a dehydrator, and the crepes use squash and coconut meat. and they are GOOD.
