Cooking With Color

Ishita writes, "This beautiful stir fry is the base for my special Thai curry whose recipe I make up every time I cook!

"Just look at the colors! What's not to like? Cooking with color is the best part of creating my own meals, and it keeps my diet well balanced and me happy!"

here;s the recipe:

heat some peanut oil and add chopped garlic, grated ginger and red chili flakes (a green chili if you like it hot)

then add base veggies- stirring in one at a time u can throw in whatever you like, i did mushrooms, leeks, bok choy, eggplant, green n red peppers, carrots, baby corn, bamboo shoots, and bean sprouts toped off with pan dried tofu

stir it all up, add hot sauce (sriracha, sambal are my favs), add soy sauce, a half teaspoon of sugar and shake it all up. add roasted chopped peanuts, a cup of coconut milk and salt n pepper.

let it soak up the juices and add fresh basil leaves on top.

dish it out and lick that plate clean!

enjoy!
