Post-Run Salad

Speaking of blood oranges, Jay made and devoured this salad after a 19 mile run:

the salad ingredients:
1 head of red leaf lettuce
1/2 a pineapple
4 kiwis
2 blood oranges
1/4 lb of kumquats

the dressing:
2-3 tbsp of raw tahini
2-3 tsp of raw agave
juice of half a lemon
water until thin enough to be a dressing

Mmm, I have some kumquats sitting accusingly in my fridge--and tahini too! This looks like the perfect way to use 'em up!

Kumquats are just adorable. I love this idea too! I've looked at the This Is Why You're Fat blog and just thought....gross.

I've only recently tried kumquats, and I keep seeing them and wondering what else to do with them. Sounds awesome!
