Sauerkraut



Speaking of fermented foods, Zucchini Breath sent in this post from Big Raw Vegan Blog on making sauerkraut. She says, "It's very traditional, delicious and healthy. It contains naturally occurring probiotics that help you get more nutrition from your food because it helps you digest other foods more completely. I eat 2-6 tablespoons a day. Great in salads or soups, on sandwiches or crackers."

My family puts sauerkraut on pizza (after it comes out of the oven). Very tasty!

I love sauerkraut but didn't know about all the health benefits. And ... I've never tried making it ... I think I'll give it a shot! Thank you for sharing this!

BTW ... was in the local book store yesterday and say your book "Vegan Lunch Box". I was so excited ... it was like seeing a friend. :)

I know, I wish I had more time to post! Between being a mom, working, doing the Vegan Lunch Box thing and taking care of the house, I've had to keep it at two to three posts a day during the week.

I *love* sauerkraut mixed with (self-made) mashed potatoes!! Can't get enough of it. : )
