Bursting-with-Veggies Omelet
Terita is a whole foods vegetarian who runs a website and blog called the Ten Ingredient Project, about simple unprocessed meals made from fewer than ten ingredients. "I believe that vegetable and fruits deserve to be the main course at every meal!"
Here is her picture of a bursting-with-veggies local omelet she made recently. "The strawberries grew in my state, the eggs were laid in my neighboring town, and the baby kale is from my backyard!"

Super Chunky Vegetable Sauce
Laura wrote in a while back, "We’re moving in two weeks, and we’re on a mission to use up what we have, without buying more, so that we won’t have to move food. This makes it a challenge sometimes to come up with a healthy meal, because you end up with a lot of odds and ends that don’t really go together. Today I put together the rest of our vegetables into a chunky healthy sauce, full of onions, garlic, zucchini, artichoke hearts, and tomatoes. It was colorful, flavorful, healthy, and oh so good served over a bit of Israeli couscous."

A Simple, Healthy Dinner Plate
From Ilana: "I am OBSESSED with making colorful and healthy meals - I get so excited to see all the colors of food down on a plate! I was really excited about yesterday's dinner so I kind of wanted to share it with the world - no joke I actually text messaged my friends and my boyfriend to tell them how excited I was about this food. It's potentially the simplest dinner in the world but I could not be happier!
"I love eating a lot of green and I really love to highlight the fresh and uncomplicated taste of vegetables! On my plate, purple grapes, a huge carrot, grilled asparagus on top of fresh baby spinach, steamed broccoli rabe, mashed roasted yam with cinnamon, and a wedge of lemon to squeeze all over everything. It just LOOKS healthy and delicious, and it totally is!!
