Selene writes, "What can I say about these raw collard-wrapped spring rolls with their yummy gingery dipping sauce? I love love love spring rolls and even though I'm gluten-free, they're one thing I always eat. So I thought I'd better make a version that was gluten-free and that, rather than being deep fried, was filled with flavor and all sorts of healthy things!"
