Green Monster

Have we inspired you to start drinking green smoothies yet? If so, I consider it a job well done.

Here is a photo of a simple green smoothie that Haleigh Ekstrom enjoys often for breakfast. It's called the Green Monster: 1 small banana, 1 cup vanilla soy milk, ice, and a handful of spinach.

You can read more about the smoothie and see before pics at Haleigh's blog Inner Wellness.

I, for one, have been convinced... Green smoothies every day. I love trying different combos - this week I'm on spinach, banana, mango, blackberries, strawberries, and flax with homemade pomegranate iced tea. At first my roommate thought I lost my mind (esp. for the spinach) but now she's hopping on board too... I'm sipping one right now in fact.

I tried making a green smoothie, but the spinach wasn't 'smooth' enough (it was chunky and I could chew it.) Is that normal? Or did I not blend long enough??

Were you using a Vitamix or other really powerful blender? If so, it just didn't get blended long enough.

If you were using a regular blender, sometimes they are just not powerful enough to get things blended smoothly. You could still try blending longer, but it may never be really creamy and smooth.

We have a Kitchenaid blender for our green smoothies, and yes, we've gotten hooked. (I gotta go downstairs to get the one my hubby left me!)

We found it works best to use the ice-chopper function to get the frozen fruit/spinach chunked up, and then turn to "puree" or "liquify" and let it rip for a few minutes. We do blend it a little longer than "regular" smoothies.

I love this website, btw. The foods are so inspiring. Makes me want to run down and cook my whole stash!

I bet this would be even better with chocolate soy milk! I'm just really looking for an excuse to include chocolate into as many things as possible :-)
