Stuffed Giant Zucchini
It's that time of year again -- time for zucchini plants to begin producing in alarming abundance! Jamie from Life of a Vegan sent in one idea of what to do with your bumper crop: stuffed giant zucchinis. These zucchini from Jamie's garden are stuffed with brown rice, mushrooms, onions, carrots, red bell pepper, garlic, and seasonings. (follow the link for more pictures and instructions!)

Kohlrabi
Emily wrote this fabulous blog entry expressing her love of a recent discovery at the produce stand, kohlrabi. First she made this salad of yellow string beans, cukes, and thinly sliced kohlrabi.
Next, did you know you can eat kohlrabi greens, too? Cook them just as you would collard greens -- they taste the same. Emily sauteed the greens with broccoli, jalapenos, garbanzo beans and tomatoes, and serve it over brown rice. Delicious!

Gluten-Free Vegan Pizza
Megan Hubbard sent us these pictures of a gluten-free vegan pizza.
"I used a premade gluten-free pizza crust, although you could use regular prepackaged or homemade crust, and topped it with tomato-basil hummus, some salsa, broccoli, red pepper and red onion."

Salad Rolls
Here's another dish that looks like it might be just right for these hot summer days. Jamie writes, "These are some salad rolls, with some sweet chili sauce for dipping. In the salad rolls are rice noodles, basil, carrots, cucumber, avocado, snow peas and green onions."

Two Yummy Summer Salads!
Zucchini Breath writes, "I have two yummy summer salads to submit! Both of these salads are raw, vegan, gluten free, quick, fresh and FANTASTIC!"
Corn, butternut squash, cauliflower, red bell pepper, roma tomatoes, carrot, plum, celery, onion, garlic, and fresh grapefruit juice. "The raw butternut squash 'cooks' in the grapefruit juice. It gets soft but stays crisp sort of like apple."

- Heirloom tomatoes (red, green and yellow)
- On the vine tomatoes
- "Garden Patch" veg juice (Trader Joe's brand)
- Annie's vegan Worcestershire sauce
- Red wine vinegar
- Cucumber (seeds removed)
- Yellow and orange bell peppers

Soul Food
Raoul writes, "My girlfriend and I went to Soul Vegetarian in Atlanta, Georgia, this past weekend -- vegetarian soul food!
"I opted for the BBQ tofu, broccoli, and brown rice with mushroom sauce and Missy went for the mock-fish sandwich with baked potato strips. We recently blogged about it on our own blog but wanted to share a few photos with This Is Why You're Thin."

Workout Road Trip
Jodelle Fitzwater from Southwest Fitness Center sent this one in: "Here's a pic of my students and I this spring on my Spring Workout Road Trip to St. Louis. I am a fitness instructor and I took a group of my students on fun fitness-filled weekend complete with a 5k, fabulous healthy food, lots of walking around the city, and one tough "Stairwell to Hell" workout in the stairwell of our hotel! It was fantastic and this is why we're thin! Proud of my girls!"
