Bursting-with-Veggies Omelet


Terita is a whole foods vegetarian who runs a website and blog called the Ten Ingredient Project, about simple unprocessed meals made from fewer than ten ingredients. "I believe that vegetable and fruits deserve to be the main course at every meal!"

Here is her picture of a bursting-with-veggies local omelet she made recently. "The strawberries grew in my state, the eggs were laid in my neighboring town, and the baby kale is from my backyard!"

Those veggies do look good, and so did the egg until I read the text and saw that it was a "real" not tofu egg. Bummer. Good thing I can make a fantastic omelet out of tofu now.

I actually came over here to say thanks for coming up with your vegan lunch box cookbooks. I just bought them and my oldest daughter and I have been looking through them this morning. I have been eating vegan for almost a year, but the rest of my family are not completely there. Thankfully they do enjoy what I cook so its normally just when we go to family's house or out to eat that they all get any meat. My oldest is 6 and will be going to 1st grade and for the first time be away from me all day - which means lunch at school. I'm surprised at what they consider a healthy lunch at a private school. She's not a picky eater thankfully, but I'm not sure what it will be like with all her friends around. I want to be able to make her lunch fun and interesting so that she will be sure to enjoy it - she's already picked out a couple pics from the book. I know it will take more time and planning on my part, but I'm excited about all the new healthy possibilities for her to have at lunch. So thanks so much!
