Quinoa Pilaf


Quinoa Pilaf with sauteed onions, carrots, celery, baby spinach, green beans and mushrooms, topped with cool sliced avocado.

Avocado is a great substitute for mayo! I love this in the morning but with a more Southwestern style - quinoa with black beans, tomatoes, onions, avocado, a little lime juice and cheese.
