Tofu and Sprouted Mung Meatballs

Meirav writes, "I was challenged to make something vegan other than edamame (that's what my friend thought vegans eat...) for a party, so I made these baked Tofu and Sprouted Mung Meatballs from tofu, sprouted mung beans and steamed carrots and peas. They turned out spicy and lovely, filling and healthy!"

Gan Jang Du Bu


Dana writes, "I'm an English teacher in South Korea and this past week my students have been learning about nutrition, obesity, and meal planning in English. I used the site This Is Why You're Fat to show them some examples of bad eating. That's when I came across your site. I love the healthy inspiration! I'm not a vegetarian, but I reguarly cook veggie meals.

"Here is a photo of a meal I made a few nights back. In Korean it's called 'Gan jang du bu' (roughly translates to "savory tofu"). It's tofu+watercress+black rice in a soy-sesame sauce."

Portobello Burgers


Hannah writes, "This is my version of a vegetarian burger. Not exactly raw food material, but vegetarian style for sure, and a damn good one at that!

"This takes about 10-15 minutes of prep and cooking combined. A toasted bun with a panfried portobello mushroom (not actually panfried, but over a pan and cooked with the help of some water), topped with two layers of thinly sliced avocados, and some panfried (again not actually fried with oil) minced tofu. The tofu was cooked with a dash of hoisin sauce, a couple of shakes of hot sauce, and a pinch of chili pepper flakes. Add a dash of pepper to both the mushroom and the tofu topping. Enjoy!"

Lemony Baked Tofu

Rice Bowl and Restaurant Recommendation


Here's another pretty picture from Natalie: "This rice bowl is my adaptation of the wonderful dishes served at Fresh Restaurants in Toronto. It has a bed of brown rice topped with satay tofu steaks (vegan, purchased at grocery store), avocado, tomatoes, chickpeas and a wedge of lemon. The dressing is Sesame Miso Sauce (also vegan) from the book Fresh at Homeby Ruth Brown and Jennifer Houston, the owner and head chef respectively of the Toronto restaurants.

"If you're ever in Toronto, be sure to check out one of several Fresh restaurants - they're just wonderful. I lived in Canada for three years, and ate at Fresh whenever I could. Now that I'm back home in Australia, I try my best to recreate their beautiful food and juices - thank goodness for cookbooks!"

GRILL WEEK: Tofu Skewers


Here's one more from Nachos in Australia: "This was last night's dinner! Grilled skewers of tofu, eggplant, zucchini, red capsicum & mushroom. They were marinated in tamari, tamarind, lemon juice, ginger & filtered water. Served with "couscous" made out of ground cauliflower & mixed herbs, salad, and a very garlicy home made hommus!"

GRILL WEEK: Tofu Steaks


Kelsea Little sent in this picture of "two lovely grilled tofu steaks which I marinated in a little bit of fresh orange juice, ginger and sesame oil. They are served over fresh grilled onions. The flavor was amazing, and it was so satisfying! Don't ever let anyone tell you that tofu can't make for a hearty meal."
