Fruit Salad


Mikaela writes, "This fruit salad was glorious, the yoghurt was so natural and fresh tasting, not masked by all those artificial sweeteners and thickeners. It was entirely pure citrus yoghurt. It has strawberries, blood orange, grapefruit and watermelon and mint. Yum this meal was delicious....And so pretty :)"

Roasted Veggie Pizza


This pizza made from leftover roasted veggies exemplifies frugality (the 4th meal from one batch of cooking!), good health, and good taste. To make it vegan, I would substitute a vegan ricotta made from tofu or nuts.

Veggie Pesto Sandwich


Liz writes, "This isn't the most beautiful sandwich, but it was so tasty! My first attempt at baking homemade bread somehow yielded a crusty flat loaf, which ended up being perfect for a serious sandwich. Pesto from my own basil, plus shredded carrots, sliced cucumber, homegrown arugula and a slice of mozzarella: a deliciously simple sandwich!"

To make it vegan, substitute some vegan mozzarella or some avocado!

Bursting-with-Veggies Omelet


Terita is a whole foods vegetarian who runs a website and blog called the Ten Ingredient Project, about simple unprocessed meals made from fewer than ten ingredients. "I believe that vegetable and fruits deserve to be the main course at every meal!"

Here is her picture of a bursting-with-veggies local omelet she made recently. "The strawberries grew in my state, the eggs were laid in my neighboring town, and the baby kale is from my backyard!"

Bean Salad Heaven


Heather from Richmond Virginia sends us this recipe: "This is a most delicious bean salad with kidney beans, chick peas, avocado, Ro Tel (a canned mix of tomatoes and chilies), cilantro & feta cheese. I couldn't stop eating it!!! I didn't create this salad, but found it on a blog by MckMama called my charming kids." Vegetarian Picnic Lunch

Krista S. writes, "Here are some pictures of my picnic lunch that I made for my coworker and her two children for our first summer picnic. We live in Anchorage, AK, and this past week has been fantastic! (High 50s & sunny)."


"The first is a corn salad with tons of cilantro, some red onion, and tomato dressed in olive oil and lime juice.


"The next is homemade hummus (recipe based on one from the book How It All Vegan!)with carrots & celery ...


"... and the last is tabouli made with onion, cucumber, tomato, bulgur wheat, green onions, and some optional feta to sprinkle in.

Muesli with Fruit and Almond Butter


This submission is from Kiki, and if you can read Greek you can even read about it on her mom's blog, Betty's Cuisine.

Muesli with Greek yogurt, fruits and almond butter: Mix 1/2 cup of muesli - you can pick and choose, use your fave muesli/granola/cereal (I use Dorset Cereals Tasty, Toasted Spelt, Barley & Oat Flakes) with 2 spoonfuls of Greek Yogurt.

Add your favorite fruits chopped up - I used a small green apple, a banana, and a handful of red grapes. Top with 1 spoonful of Almond Butter.

I think soy or coconut yogurt would be a great vegan substitute for the dairy yogurt.

PIZZA WEEK: Mexican Pizza


Whole-wheat and cornmeal crust topped with mashed black beans, salsa, cheddar cheese, onions, peppers, cumin, greek yogurt and homemade guacamole. 200 calories a slice!

PIZZA WEEK: veggie and shiitake


Megan Raley writes, "I made a most delicious veggie pizza a few months ago and had to take a photo of it. I used a locally-milled pizza crust mix that I then baked at home. The toppings are: flavored olive oil in place of tomato sauce, sliced tomato, zucchini, shiitake mushrooms, onion, fresh home-grown basil and fresh soft mozzarella on top." To make this pizza vegan, try substituting vegan mozzarella cheese. I hear Teese makes a mean vegan mozzarella.

Bonniejean says, "Thinly sliced butternut squash, sage and walnut pizza on a wholegrain crust! (There is some gruyere cheese on it, but I'm sure it would be
just as delicious with the squash, sage and walnuts.) A spinach strawberry and balsamic vinegar salad to go with it. One of my favorite meals ever!"

Toasted Millet Stuffed Peppers

Made with toasted millet, sauteed mushrooms, green onions, black beans, fresh salsa, red bell peppers, and a sprinkling of feta cheese on top.

I think pine nuts would make a lovely vegan alternative to the feta.
