Toasted Millet Stuffed Peppers

Made with toasted millet, sauteed mushrooms, green onions, black beans, fresh salsa, red bell peppers, and a sprinkling of feta cheese on top.

I think pine nuts would make a lovely vegan alternative to the feta.
